Vegan Peanut Butter Dark Chocolate Chip Cookie Dough

Normally I would tell you that healthy and dessert don’t exactly belong in the same breath. However, that’s before desert hummus became a thing. Enter this Vegan Peanut Butter Dark Chocolate Chip Cookie Dough! I know what you’re thinking, however…. dessert hummus?!? Rest assured, this dessert delivers. It’s creamy, rich and oh so delicious. On top of all of that it’s easy to make and only requires 7 simple ingredients.


Can a dessert really be healthy?

Yes, you heard it right. This dessert is healthy! It uses chickpeas as the based, natural unsweetened peanut butter for creaminess and dates for sweetness. I added just a touch of pure maple syrup and pure maple extract to dial up the sweetness, then finished it off with vegan dark chocolate chips. I used Enjoy Life Dark Chocolate Morsels, which do contain added sugar. Of course, you can eliminate the dark chocolate and the maple syrup and make this into a totally no-added sugar recipe as well. However, there are only 2 grams of added sugar per serving in this recipe and I promise you the dark chocolate, maple and cinnamon make for a drool-worth combination. This recipe also contains a whopping 7 grams of fiber per serving, helping slow digestion, minimize any sugar crashes and keep your gut healthy. So, I say LIVE and eat some dark chocolate in your dessert hummus!

How easy is this recipe to make?

This recipe is so simple and comes together in minutes. Simply cover your dates with boiling hot water and soak them for 10 minutes (or do this the day before and soak overnight). Next rinse your chickpeas and if you have time, remove the outer skin. This will help provide a creamier texture, but if you don’t have time skip it. The dessert will still taste amazing. Place the dates in the food processor (or high speed blender, like BlendTec) and process/blend until a smooth paste forms. Add the remaining ingredients, except for the chocolate chips, and process/blend again for a few more minutes until smooth. Finally, mix in the dark chocolate chips. I recommend heating each serving up in the microwave for just a few minutes to soften the chocolate chips. Then spoon, swoon and spoon again! So good!

Vegan Peanut Butter Dark Chocolate Chip Cookie Dough

Prep time: 10 mins       |  Make time:  5 mins   |   Total time: 15 mins

Serves: 6

Ingredients

  • 1 1/4 cup packed dates, pitted (about 30 dates)

  • 1-15oz can chickpeas, no salt added, drained and rinsed (I used Whole Foods 365 brand)

  • 1/3 cup natural, unsweet peanut butter (use sunflower butter, for an allergen free version)

  • 1 tsp pure maple syrup

  • 2 tsp pure maple extract

  • 1 tsp cinnamon (I used Korintje which is sweet and mellow; but any cinnamon will work)

  • 2 tbs vegan dark chocolate chips (optional; I used Enjoy Life Dark Chocolate Morsels)

Directions

Prep:

  1. Place the dates in a bowl and cover with boiling hot water to soften (or soak overnight)

  2. Drain and rinse the chickpeas. If you have time, remove the outer skin of the chickpeas for a softer texture, while rinsing.

Make:

  1. Drain the dates and add to the food processor (or high speed blender). Process/blend for a few minutes until a smooth paste forms.

  2. Add the remaining ingredients, except the chocolate chips to the food processor/blender. Process/blend again for a few minutes until smooth and blended well.

  3. With a silicone spatula, stir in the chocolate chips

  4. Heat each serving in the microwave for a few minutes to soften the chocolate chips and Enjoy!
